We love to make this in the summer with some of the Homemade Applesauce we made in the fall. You can make a batch of your own with our recipe or use prepared applesauce of your choice. Look in the refrigerated section of the farm store for our own.

Ingredients:
3 Eggs
1 cup granulated sugar
1 cup applesauce
1 tsp vanilla extract
2 cups grated zucchini
3 cups all purpose Flour
½ tsp kosher salt
1 tsp baking soda
1/2 tsp baking powder

Directions:

Preheat the oven to 325 degrees.
In a medium bowl, whisk to combine flour, salt, baking powder and baking soda.
In a large bowl, beat eggs until light and fluffy. Add sugar and applesauce. Add zucchini and vanilla. Add dry ingredients to the wet ingredients and stir to combine.
Fill greased muffin tins or liners. Bake for 30-40 minutes until golden brown.
