Our melon bins are piled high with seeded and seedless watermelons that have red or yellow flesh. You can also make this salsa with our cantaloupe, honeydew or canary melons.
4 cups watermelon, deseeded and diced
2 cups cucumber, deseeded and diced
1/2 cup cilantro, chopped
1/2 cup scallions, thinly sliced
1-2 jalepeno peppers, deseeded, fineely diced
1/2 cup fresh lime juice
2 tsp sugar
salt and pepper, to taste
Cut the watermelon and cucumber into 1/2 inch cubes.
Add to a large bowl and add the cilantro, scallions and jalepenos.
Stir to combine.
Sprinkle the sugar over the salad and pour over lime juice.
Season to taste with salt and pepper. Chill before serving.
