Ingredients:

  • 6 sausages, sweet or hot Italian
  • 3-4 peppers of different colors, sliced 1/2 inch thick
  • 2 onions, peeled, halved and sliced 1/2 inch thick
  • 4-5 russet potatoes, peeled, halved lengthwise and cut into 1/2 inch thick slices
  • 2 Tbsp olive oil
  • salt and pepper to taste

Directions:

  1. Prick the sausages a few times with the point of a knife.
  2. Combine all the ingredients on a sheet pan large enough to hold it in one layer, or separate onto two pans.
  3. Roast at 400 degree for 30 to 45 minutes, turning the sausages and vegetables half way through, until the sausage is done, and the potatoes are nicely browned.
  4. Serve as is, or in rolls for sausage sandwiches.
