Ingredients:

  • 1 lb trimmed boneless pork chops
  • ¾ tsp kosher salt
  • ¾ tsp paprika
  • ¾ tsp fresh or dried thyme leaves
  • ¼ tsp ground pepper
  • Cooking Spray
  • ¼ cup sliced shallots
  • 2 medium apples (unpeeled, cored and cut into slices)
  • 2/3 cup chicken broth
  • 2 tsp cornstarch
  • ¼ cup apple cider

Directions:

Preheat skillet or electric frying pan. Combine salt, paprika, thyme and pepper; sprinkle over both sides of chops. Coat pork with cooking spray. Sear 2 minutes per side. Add shallots; sauté over medium heat for 3 minutes. Add apples and, sauté 2 minutes. Combine broth and cornstarch in separate bowl; mix well. Add to pork pan with cider. Simmer uncovered, stirring occasionally, 5 minutes or until pork is cooked through and sauce thickens. Apples should be tender.
