Ingredients

Crust

  • 2 1/2 cups flour
  • 1 cup butter
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/2 cup buttermilk

Filling

  • 1 lb blueberries
  • 1/3 cup sugar
  • 2 tablespoons cornstarch
  • 1/4 teaspoon nutmeg
  • Zest of one lemon
  • 1 tablespoon lemon juice
  • 1 egg plus 1 eggwhite wash
  • Sanding sugar

Directions

Pick blueberries at Terhune orchards!

Crust:
Stir flour, sugar and salt. Add butter in cubes and toss to combine. Roll mixture together with rolling pin to flatten butter. Scrape back into bowl and add buttermilk, mixing with fingers.
Roll and cut into 6-8 inch circles. Refrigerate overnight.

Filling:
Combine sugar, cornstarch, nutmeg, lemon zest, and lemon juice. Add blueberries and mix.

Preparation:
Roll out dough disks, spoon in blueberries and fold edge. Brush with egg wash and sprinkle with sugar. Bake at 400 F for 30-35 minutes. Feast!
