This creamy delicious treat can be made with chunky or pureed strawberry mixture but we prefer the pureed so it blends more throughout the ice cream.
Ice Cream base:
2 large eggs
¾ cup sugar
2 cups heavy or whipping cream
1 cup milk
Whisk the eggs in a mixing bowl until light and fluffy, 1-2 minutes. Whisk in the sugar, a little at a time, then continue whisking until completely blended, about 1 minute more. Pour in the cream and milk and whisk to blend.
2 cups fresh strawberries hulled and sliced
Juice of ½ lemon
1/3 cup sugar
Combine the strawberries, sugar and lemon juice in a mixing bowl. Puree or just lightly smash strawberries depending on the size chunks you want in your ice cream. Cover and refrigerate at least 1 hour.
Stir the ice cream base and strawberry mixture together. Put into ice cream machine for 30 minutes and put into freezer to finish chilling. If you do not have an ice cream maker, put the bowl in the freezer and stir every 30 minutes for 3 hours to make a creamy tasty dessert.
