Created by Ali Meyers, this recipe won Second Place in the 2021 Blueberry Bake-Off Competition.

Makes 12 muffins.

Wet Ingredients

  • ½ cup salted butter melted; cooled
  • ¾ cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 2/3 cup of milk

Dry Ingredients:

  • 2 ¼ cup flour
  • 1 Tsp baking powder
  • ¼ tsp salt
  • 1 cup fresh blueberries

Streusel Topping:

  • 2 ½ tsp sugar
  • 2 ½ tsp brown sugar
  • 4 Tbsp cold butter
  • ½ cup flour
  • 1 tsp cinnamon

Directions:

  1. Combine all wet ingredients.
  2. Combine all dry ingredients.
  3. Combine wet and dry ingredients.
  4. Carefully stir in blueberries.
  5. Pot mix in lined cupcake or muffin tin.
  6. Mix streusel topping.
  7. Sprinkle streusel on top of muffins.
  8. Bake at 400 degrees for 18 minutes.
