Each year at our Blueberry Bash, local amateur bakers enter our Blueberry Bakeoff contest. The not so secret ingredient is blueberries.

Ingredients:
Crust:
1 1/4 cup flour
1/4 tsp sea salt
1 Tbsp granulated sugar
1/2 tsp. baking powder
10 Tbsp of cold, unsalted butter cut in cubes

Filling:
2 cups blueberries
1/3 cup sugar
2 Tbsp cornstarch
zest of lemon
3 Tbsp lemon juice
1/4 tsp ground ginger
1 Tbsp cinnamon
1/4 tsp nutmeg
1/8 tsp kosher salt

Egg wash:
2 eggs, lightly beaten

Directions:
For the crust
1. Mix together in food processor all the crust ingredients. Blend in the food processor. Add 3-4 tablespoons of ice cold water and mix until it just comes together.
2. Form dough into a ball and place in plastic wrap to cool in the fridge.

For the Filling
1. Heat filling ingredients on the stove until it thickens.
2. Let cool.

Assemble the handpies:
1. Preheat the oven to 425 F.
2. Roll out dough and use a cookie cutter to cut 16 circles. 3. Place berry filling on 1 circle. Brush edge of dough with egg wash. Place another circle on top. Pinch together sides and use a fork to press closed.
3. Brush pies with egg wash, cut three small slits in center of top with a paring knife, and sprinkle handpies with a mixture of sugar, cinnamon and a pinch of salt.
4. Bake for 12 minutes.
