Blueberry Bash Bake-Off Contest Winner 2008 2nd Prize Pina Schonheiter
- 1 9” or 10” baked pie shell
- 2 ½ cups fresh blueberries, divided
- ½ cup water
- 2/3 cup granulated sugar
- 2 Tbsp cornstarch
- dash kosher salt
- 1 Tbsp unsalted butter 6 oz cream cheese
- 3 Tbsp powdered sugar
- 2 Tbsp half and half
Blueberry Sauce: Cook 1 cup blueberries and ½ cup water, slightly mash. Combine granulated sugar, cornstarch and salt in a separate small bowl. Stir cornstarch mixture into blueberries and cook until thickened. Add 1 butter.
Dream Layer: Beat together cream cheese, powdered sugar, half and half; spread on bottom of pie shell. Spread remaining fresh blueberries over cream layer. Pour blueberry sauce over all and serve.
