This is a great apple tart that does not require a crust.
- ¾ cup all purpose flour
- 3 Tbsp unsalted butter
- 4 Tbsp granulated sugar
- 2 eggs
- Zest of 1 lemon, thinly grated
- 4 apples (tart)
- Apricot jam
Cut 2 apples into small chunks Whisk sugar and eggs until slightly stiffened. Add flour and stir with a wooden spoon. Add apple chucks, lemon zest and softened butter. In a buttered tart tin, add batter mixture. Slice remaining two apples, thin wedges. Arrange slices decoratively on top of batter. At 400 degrees F, bake until toothpick removes cleanly and is slightly browned on top. Cover with melted apricot jam.
