Ingredients:

Part 1:

  • 2 cups water
  • ¼ lemon (zest and juice)
  • 4 large apples
  • ½ cup granulated sugar

Part 2:

  • 4 oz./1 stick unsalted butter
  • 3 egg, separated
  • ½ cup blanched almonds, ground
  • 2/3 cup granulated sugar
  • 2 tsp lemon juice
  • Pinch kosher salt

Directions:

Peel the apples and cut in half, remove core. Put water and lemon in a 2-quart saucepan and bring to a boil. Cook apple halves until tender but not soft. Drain on a plate. Preheat oven to 350 degrees Grease shallow baking dish (large enough for apples to fit in one layer) with 2 teaspoons butter. Place apple halves cut side down. Cream the remaining butter with electric beater. Beat in the sugar a little at a time; add egg yolks one at a time. Add almonds, which have been ground in a food processor, and lemon juice. In another bowl, beat egg whites with a pinch of salt until stiff. Mix 2 tablespoons of the egg whites with the mixture – gently fold in the remaining egg whites with the rest of the mixture using a rubber spatula. Do not over mix. Spread the almond mixture over the poached apples. Bake 20 minutes, until golden brown.
