Gazpacho

A cold soup is a refreshing summer meal. Tomatoes are the main ingredient, but scallions and cucumbers give this soup body and bite. recipe

Serves 6

4 large ripe tomatoes
2 1/2 cucumbers
1 large green pepper
8 scallions
1 - 2 cloves garlic
Salt
1/4 cup red wine vinegar
3 cup V-8 juice
Worcestershire sauce
Freshly ground pepper

Peel, seed, and chop in 1/4-inch pieces the tomatoes, and 2 of the cucumbers. Wash and trim the pepper and scallions and chop into 1/4-inch pieces. In a small bowl, combine finely chopped garlic, 1 teaspoon salt, vinegar and oil; beat.

Combine this dressing with the chopped vegetables and stir in the V-8 juice. Add more V-8 to the consistency you prefer. Season with a dash or two of Worcestershire sauce, pepper, and salt. Chill.

Slice 1/2 cucumber for garnish on top. Serve.
