Berry Biscuits Ingredients:
1 cup all-purpose flour
1 cup unleavened cake or pastry flour
2 tsp. baking powder
½ tsp baking soda
2 tsp sugar
½ tsp salt
1 stick unsalted butter, chilled and firm
½ pint fresh raspberries or blackberries
2/3 to 1 cup buttermilk
2 tbsp melted butter
Preparation:
Preheat oven to 425 degrees
Combine the flours, baking powder, baking soda, sugar and salt in the bowl of a food processor. Pulse a few times to blend well. Chop the butter into several pieces and add to the processor. Pulse several times to cut the butter in until bits of butter are no larger than small peas and the mixture has a powdery oatmeal appearance.
Transfer the contents of the processor to a large mixing bowl. Add the berries and gently stir in ¾ cup of the buttermilk just until the dough begins to gather. If it’s too dry add a bit more buttermilk and gently stir together to form a soft, slightly crumbly dough that just gathers together.
Using a small ice cream scoop or lightly floured hands, drop rounds of the dough onto an ungreased baking sheet. Brush the tops with melted butter and sprinkle each with a pinch of additional sugar. Bake for about 10 minutes or until lightly browned on top. Serve immediately.
