Blueberry Ice Cream

Ingredients:
2 cups Fresh Blueberries
¾ cup water
1 cup sugar
1 cup heavy cream
1 tablespoon heavy cream

1.  In a 2quart sauce pan, combine the blueberries, water and sugar. Bring to a boil over medium-high heat, stir occasionally. Reduce heat to medium and simmer 1 minute. Remove from heat and let stand for 30 minutes.

2. Pour the blueberry mixture into a food processor. Process until smooth, about 1 minute. Strain through a fine-mesh sieve into a bowl. Cover and refrigerate at least 3 hours or up to 24 hours.

3.  Add the cream and lemon juice to the blueberry puree and stir to combine.

4 Pour the mixture into an ice-cream maker and freeze according to the manufacturer’s instructions. Transfer to a container and freeze unit firm. Enjoy! Garnish with a few fresh berries if desired.
