Apple Bars

1 cup sifted flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cup brown sugar, firmly packed
1 cup oatmeal
1/2 cup butter
2 1/2 cups sliced, peeled Terhune Orchards apples (Stayman, Jonathan, Granny Smith)
1/4 cup sugar
2 tablespoons butter

Sift together flour, salt, and baking soda. Add brown sugar and oats to the flour mixture and mix well. Cut in the butter until mixture is crumbly. Press half of the mixture into a greased 8-inch square pan. Place the apples on the crumbs and sprinkle with sugar. Dot with the butter and cover with the remaining crumb mixture. You could add nuts if you have some. Bake for 40-45 minutes at 350 degrees. Serve cold like cookies. Great for school lunches or hot with ice cream.
